A Filipino rice cake that can be enjoyed for breakfast, dessert, or as a snack. The spongy cake is made from rice flour and, either, water or coconut milk.

Traditionally, it is cooked between two banana leaves and heated on both sides by coals. The end product should have both sides of the pastry a bit charred and taking on the scent of the banana leaf it was cooked in.

Bibingka can be enjoyed with a variety of different toppings and fillings.

This particular bibingka is lightly topped with sugar and has grated coconut baked inside.
